Limousin Rye

MULTI-STAGE AGING PROCESS

We age our whiskey in once-used bourbon barrels to protect the spicy flavor of the rye grain. Used cooperage imparts less tannin to the spirit, allowing more flavor to come through with less bitterness.

LIMOUSIN OAK SOLERA FINISHING

The finishing touch is Limousin Oak. One of the world’s most expensive cooperage. We blend 20-30 barrels to finish in our 16-barrel custom solera system of French Limousin Oak for 3-6 months.

SECONDARY FINISHING

Our whiskey is refilled into individual casks and slow-proofed for about 2 months.

Maple Smash

  • 2 oz Limousin Rye

  • ¾ oz Fresh Lemon Juice

  • ¾ oz Dancing Goat Barrel Aged Maple Syrup

  • Spring of mint (for garnish)

  • Lemon wheel (for garnish)

Combine all ingredients in a mixing glass with ice. Stir for 22 seconds. Strain into a glass packed with fresh ice. Garnish with a mint sprig and lemon wheel.

Ingredients are essential in cocktails. Do not substitute pre-juiced lemon for fresh lemon in cocktails. Another syrup or whiskey will not be the same, we designed the alcohol and the syrup for this drink.
